Morakniv Professional Food Industry Knives
Morakniv manufactures professional knives for meat processing, fish handling and food production — developed for specific tasks in demanding environments. The range is defined by blade geometry, length and flex grade, so you can select the right knife for each application.
All knives are manufactured in Östnor, Mora, Sweden. The blades are made from Swedish stainless steel Alleima®, giving you consistent cutting performance and corrosion resistance in professional food-processing environments.
The PUG handle — Performance Universal Grip — brings the range together in a durable, glass-fiber reinforced polypropylene design developed for repetitive work and demanding hygiene procedures.
The assortment includes metal-detectable blue options and individual QR codes support traceability throughout the product lifecycle.
The Steel
Swedish stainless steel from Alleima in Sandviken has been used in our knives for over a century — a hallmark of consistent quality. Over time, the share of recycled material has steadily increased, and today the steel contains 80–90% recycled Swedish stainless steel.
Modern stainless steel production rarely relies on virgin raw material alone. Recycled steel retains the same high material properties, and increasing the recycling rate helps reduce carbon emissions in steel manufacturing.
Our blades feature a fine microstructure that supports sharp, precise edges and reliable cutting performance in demanding professional environments. The steel combines corrosion resistance with balanced hardness and toughness, reducing the risk of chipping or cracking during repetitive food-processing tasks.
Each blade is ground for consistent geometry and predictable performance. The result is stable cutting behaviour, reliable resharpening and long service life in professional use.

In professional food processing, control starts in the hand. Handle design plays a key role in safety, precision and efficiency during repetitive daily work.
The PUG handle — Performance Universal Grip — introduces a durable handle platform made from glass-fiber reinforced polypropylene. The refined geometry supports a secure grip, controlled rotation and stable handling, even during long shifts and demanding hygiene procedures.
Alongside PUG, the range also includes established handle concepts such as Ergonomic Grip, G-Grip, Uni-Grip and Progrip — each developed for different working environments and user preferences.
All handles are designed for professional use, providing stability, reliable friction and ergonomic shaping that supports precise movements and helps reduce fatigue during repetitive tasks.

Metal-detectable blue – integrated safety and traceability
Selected models are available in metal-detectable blue plastic, where both the handle and knife sheath are made from a detectable polymer. This makes it possible to detect foreign objects in food production and contributes to increased process safety. The material is designed for direct food contact and is adapted for reliable detection in the metal detection systems used in industrial food production. The blades and flex grades
Morakniv’s food industry knives are developed to meet the performance and hygiene requirements of professional food processing. Blade geometry, length and flex are carefully defined to provide control, consistent cutting performance and efficient handling across demanding production environments.
The range is available in four flex grades, allowing you to choose the right knife based on cutting technique and task:
- Stiff – High stability and strong edge support for forceful or controlled cutting where rigidity is required.
- Medium Flex – A balanced combination of stability and flexibility for versatile processing tasks.
- Flex – Increased flexibility for controlled cutting close to bone and natural contours.
- Extra Flex – Maximum flexibility for fine filleting and detailed trimming where close contour following is essential.

Cryogenic Hardening for Edge Stability
Each blade undergoes cryogenic hardening to refine the steel structure and improve cutting performance.
The process increases edge retention and reduces internal stresses in the material, improving resistance to chipping and cracking — even during demanding processing work.
The result is stable hardness, longer sharpening intervals and consistent cutting performance.
