Chef’s Knife Classic 1891 (S) features a 22 cm blade in Swedish stainless steel. A versatile, well-balanced knife for finely chopping vegetables and slicing fish and meat with precision in every cut.

A Chef’s Knife Made in Mora, Sweden
Each blade is crafted through a meticulous process perfected over 130 years in our Mora factory. We aim for the perfect balance of sharpness and edge retention. The knife steel is heated to over 1000°C in a controlled atmosphere, then cooled to room temperature and cryogenically frozen to -80°C.The blade is then tempered at high temperatures to enhance the steel hardness (HRC) for optimal performance.
Side grinding and final edge honing are done under careful control, resulting in a total edge angle of 36 degrees – 18 degrees per side. We finish by engraving the Dalarna coat of arms onto each knife blade.
Every component is crafted with mastery and assembled by hand at our knife factory in Mora, Sweden.
