The slim, flexible blade is designed to deliver maximum precision when trimming meat or filleting fish. It follows the contours of the ingredient and has exceptional sharpness that lets you make clean cuts and thin, even slices close to bone and skin.

The knife is well balanced with a barrel-shaped handle and integrated finger guard for safe handling. Stainless steel ferrules protect the wood from moisture and bacteria. The rounded spine and tip make it easy to scrape the cutting board and reduce the risk of injury.

Swedish stainless steel with excellent edge retention


The blade is 2.5 mm thick and 188 mm long, made from Swedish stainless steel (12C27) with a recycling rate of over 80% and a hardness of 58 HRC. The blade is highly flexible with excellent blade memory and an 18° sharpening angle per side for precise cuts.
